Pumpkin Chocolate Chip Cookies

Dry Ingredients

2 C flour
1 tsp baking powder
1 tsp cinnamon
½ tsp baking soda
½ tsp nutmeg
dash of salt

Additional Ingredients

½ C butter
1 C brown sugar
1 egg
~15 oz pumpkin purée
1 tsp vanilla
1 C chocolate chips

Preheat oven to 375°F. Grease cookie sheet or use parchment paper. Mix dry ingredients and set aside. Beat butter for 30 seconds. Add brown sugar and beat until fluffy, then continue to beat as you add in the egg.

Stir in pumpkin and vanilla, then mix in dry ingredients and continue to beat until smooth. Stir in chips. Drop spoonfulls onto cookie sheet and bake 8-10 minutes.

Yields: a dozen cookies
