Breakfast Omelette Pizza

1 can of raw biscuits
6 – 8 eggs
1 lb. sausage, bacon or ham
1/2 sweet onion, chopped
1/2 green pepper, chopped
1 medium tomato, diced (roma)
~20 oz shredded cheese (enough to cover)
salt & pepper to taste
Optional ingredients: mushrooms, olives, etc.

Saute onion and green pepper in a little butter and set aside. Pre-cook meat, drain grease (or heat up pre-cooked bacon). Slice biscuits in half length-wise and line cookie sheet or pizza pan with raw biscuits (cut up the last biscuit or two into small pieces to fill in the gaps and round out the edge). Cover with meat.

Beat eggs, then add in tomato, onion, green pepper, and salt & pepper – stir to blend, then pour egg mixture on top of crust and meat. Bake at 350 degrees for 20 – 25 minutes or until eggs are set. Add cheese. Return to oven until cheese is melted. If desired, serve with a side of salsa.
