Pesto Tilapia

This is a staple in the DeBirk household!  We have it about once a week.  It goes really well with a batch of quinoa and seasoned veggies!

Ingredients:

  • Three tilapia fillets (easily adaptable for any amount)
  • 3 Tbsp prepared pesto (Trader Joe’s has great pesto!)
  • 3 Tbsp Italian seasoned bread crumbs
  • 1 Tbsp grated Parmesan cheese
  • ground black pepper

Directions:

Preheat oven to 375 degrees.  Cover a baking sheet with foil and coat with non-stick cooking spray.  Place fish on baking sheet and sprinkle with black pepper.

In small bowl, combine pesto, breadcrumbs and cheese.  Divide topping evenly over fish, spreading with your fingers and pressing into fish.

Bake for 15 minutes, or until fish flakes easily with a fork and is completely opaque.
